Menu Planning Monday

Menu Plan Monday is hosted over at Gluten Free Goodness (this week’s post is over here). It’s a round-up every week of gluten-free menus from all over the ‘net. It’s a good place to get menu ideas if you’re running dry or feel like you’re eating the same five things over and over again.

Not that we’d do that. :) (This is a huge problem for us.)

My household menu plans Saturday to Friday. Our favorite farmer’s market runs Saturday mornings (when we make it into town for it; lately, we’ve been eating out of our freezer and from our local co-op). We don’t always stick to the plan, but if we start with a plan (even if we end up swapping days around) we avoid the “What do you want to eat?” “I dunno, what do you want to eat?” cycle. (The cycle that leads to pizza delivery – which is not an option anymore, even without my gluten intolerance, as we live 8 miles from the nearest fast food pizza joint.)

So, this week, we’re eating…

this past Saturday night: beef taco salad

tonight: sausage, twice baked potatoes, grapes, squash, applesauce (home canned by my mom)

Monday: goulash (this is a go-to recipe in our family) (skip the dumplings; this stew is excellent over garlic mashed potatoes)

Tuesday: ham and corn salad, minus the croutons (I might do garlic bread on the side; Udi’s is the best gluten-free bread I’ve eaten. It’s also crazy expensive. But so good. You’d swear it was the real deal, but you won’t be sick after.)

Wednesday: slow cooker barbeque chicken (with gluten free Worcestershire, and tamari), corn muffins, broccoli, oranges

Thursday: Either my mother-in-law cooks, or we’ll do chicken apple sausage and sides

Friday: baked chicken in creamy tomato sauce, garlic mashed potatoes, something green, something fruit
